Potato Salad

Ingredients:
4-5 large potatoes2-3 leeks, white parts only, very finely chopped
juice of
1/2
a lemon
5 tbsp extra virgin olive oil
salt and pepper, to taste
Directions:
Peel and boil the potatoes for about 25 minutes, leaveto cool and dice.
In a salad bowl add the leeks, lemon juice, salt, pepper
and olive oil. Stir to combine. Add in the potatoes, toss to
combine and serve.
